Sarah's Cran-Apple Chevre Chicken Breast

On my most recent visit to the Keys, I helped Sarah make her fabulous Cranberry-Apple Chicken Breast with Goat Cheese Crumbles. It was a fun, colorful, (healthy!) easy meal to complete our girls night!




4 Chicken Breasts

3 Tart apples

8 ounces crumbled goat cheese

6 ounces dried unsweetened cranberries

Fresh cranberries

Orange zest

Black pepper

Squeeze lemon juice

Cook at 375 for 30 minutes






Combine the apples, dried cranberries, and crumbled goat cheese in a large bowl.





Fillet each chicken breast and spread it open on a lightly greased pan.



Squeeze fresh lemon onto the chicken, then evenly distribute the fruit-cheese mixture between each breast.




Sprinkle with fresh cranberries and grate some orange zest and black pepper over the top of each breast. The zest was wonderfully aromatic, and the fresh cranberries were a perfect touch.



Cook at 375 until the chicken is cooked and the topping is golden, around 30 minutes.
